Abstract
Rosehip (Rosa canina) juice and pomace powders were produced with carbohydrate carriers for beverage development. Non-pasteurised pomace powders exhibited higher antioxidant capacity than juice counterparts, highlighting the value of rosehip pomace as an antioxidant-rich matrix for functional beverages.
