Abstract
Rosehip (Rosa canina) pseudo-fruits were freeze-dried with different biopolymer encapsulating agents and evaluated for organic acids, minerals, fibre, phenols, carotenoids and antioxidant activity, showing rosehip powder is a functional food ingredient rich in ascorbic acid, minerals and antioxidants.
