Evaluation of the biochemical components and chromatic properties of the juice of Vaccinium macrocarpon Aiton and Vaccinium oxycoccos L.
Abstract
Benzoic acid, total anthocyanins, soluble solids, titratable acidity and colour were measured in the juice of the American cranberry Vaccinium macrocarpon and the European cranberry Vaccinium oxycoccos. V. oxycoccos juice contained 17.5 mg/L benzoic acid and 42.5 mg/L anthocyanins, with six anthocyanins (peonidin-3-galactoside predominant), characterising the fruit's bioactive composition.
