Plant of the Week: Fool's Parsley (Aethusa cynapium)
Traditional / reference
Abstract
Botanical society profile of fool's parsley: it has unmistakeable long and pointed bracteoles that hang on the outer side of the umbels, and the foliage smells foul ('mousey') when crushed, distinguishing it from the culinary herbs it resembles. Anchors the drooping bracteole beard and the mousey crush-smell that separate fool's parsley from coriander/parsley.
