Abstract

Comparing non-fermented and fermented Epilobium angustifolium (willowherb) leaves, this study identified a water-soluble melanoidin pigment formed during fermentation as a new antioxidant component, explaining the high antioxidant potential of fermented willowherb (Ivan-chai) tea.
