Bioactive Potential of Elderberry (Sambucus nigra L.): Antioxidant, Antimicrobial Activity, Bioaccessibility and Prebiotic Potential
Abstract
Freeze-dried elderberry (Sambucus nigra) powder, rich in anthocyanins (cyanidin-sambubiosides and cyanidin-glucosides), showed high antioxidant activity and antimicrobial activity, and its polyphenols exerted a prebiotic effect, positively influencing the growth of five probiotic strains, with high bioaccessibility after simulated digestion.
