Abstract
Elderberry (Sambucus nigra) is rich in anthocyanins, other polyphenols and vitamins, allowing it to be used by the food industry as both a natural colorant and antioxidant. This review summarises its main bioactive compounds and its potential uses, including production of functional foods with high antioxidant capacity.
