Valorization of Capulin Almond (Prunus serotina) by Obtaining Bioactive Compounds

Abstract

The shell, paste and oil of the Capulin almond (the seed of Prunus serotina) were valorised by extracting antioxidants. The by-products were a source of phenolic compounds and flavonoids with antioxidant activity (ABTS and DPPH), identifying P. serotina seed by-products as a source of antioxidant bioactive compounds.
