Generally safe when used in food amounts. Not toxic to people and safe to cook with. Leaves are very rigid and leathery - should be removed before eating as they don't soften with cooking and edges can be sharp. Insufficient reliable information about safety during pregnancy or breastfeeding - stick to food amounts. Large amounts of bay leaf tea may cause vomiting (emetic properties) and drowsiness (sedative properties). In high doses, bay laurel has cytotoxic activity. Some people may experience allergic contact dermatitis from bay laurel oil.

Botanical Description

Aromatic, rhizomatous perennial herb with erect, grooved, softly hairy stems arising in clumps from a creeping rootstock. The leaves are alternate, 2-3-pinnately dissected into narrow feathery segments, giving the whole plant a soft, fern-like texture (hence 'millefolium', thousand-leaved). Numerous small white to pale-pink flower heads are borne in dense, flat-topped compound corymbs at the stem tips. The plant has a sweet, herbaceous, slightly medicinal aroma when crushed.[12]

Habitat

A common plant of grassland, meadows, roadsides, pastures and waste ground on a wide range of soils; native throughout Europe and temperate Asia and now naturalised across North America, Australia and New Zealand.[12]

Harvesting

The flowering aerial parts (leaf, stem and flower) are cut as the flat-topped corymbs open, in mid- to late summer, and dried quickly in a warm, shaded, airy place to preserve the essential oil and colour.[12]

Traditional Uses

Yarrow has an ancient reputation as a wound herb (its old name 'staunchweed' and its association with Achilles reflect traditional use to stop bleeding and heal wounds) and as a bitter digestive and diaphoretic remedy for feverish colds, spasmodic gastrointestinal complaints, hepatobiliary disorders and gynaecological complaints. The flowering herb is classically taken as a hot infusion at the onset of a cold or fever to promote sweating, and used as a bitter tonic to stimulate appetite and digestion.[2, 12]

Bay leaf has an ancient Mediterranean culinary and medicinal history, used as a digestive carminative for indigestion and bloating, and topically and traditionally for muscle and joint pain and minor wounds; it remains one of the most widely used culinary herbs worldwide.[11]

Infusion[12]

Dried flowering herb infused in hot water as a bitter digestive and diaphoretic tea, traditionally taken hot at the onset of colds and fevers.

Tincture[13]

Confused Part: Young feathery, finely divided leaves gathered for tea, salad or medicine; poison hemlock's young leaves are also feathery and finely divided.
Confusion Context: Yarrow (Achillea millefolium) is foraged for its soft, feathery, fern-like leaves. As Grow Forage Cook Ferment warns, yarrow is sometimes mistaken for poison hemlock (Conium maculatum), which is very toxic - hemlock contains coniine and kills by ascending paralysis and respiratory failure, and a few leaves can be fatal. Young hemlock leaves are more feathery and can resemble yarrow before the plant grows tall. Because yarrow is a popular forage and hemlock is widespread, this is a potentially fatal confusion.
Distinguishing Features: SMELL: yarrow smells sweet and herbaceous, often likened to fresh pine or a pleasant medicinal scent. Poison hemlock smells rank and musty/mousy., Stem: yarrow has a solid, green, slightly hairy/woolly grooved stem with no purple. Poison hemlock has a hairless stem conspicuously blotched and streaked with red-purple, especially near the base., Leaf and size: yarrow leaves are soft, very finely divided and feathery on a low plant (usually under 60 cm). Poison hemlock is a tall (1.5-3 m) branching biennial with larger, glossy, more open fern-like leaves.
Key Test: Check the stem and smell. A solid green (often woolly) stem with soft feathery leaves and a sweet pine-like herbaceous scent = yarrow. A hairless stem with red-purple blotches and a musty/mousy smell = poison hemlock - deadly, do not put it to your mouth. If the stem is purple-blotched or the smell is musty, do not use it.

Dangerous Plant: prunus-laurocerasus
Confused Part: Glossy evergreen leaves gathered for use as bay/laurel seasoning; cherry laurel leaves closely resemble bay leaves and have been collected in mistake for them.
Confusion Context: Cherry laurel (Prunus laurocerasus) is a very common evergreen hedging shrub whose thick glossy leaves closely resemble those of culinary bay (Laurus nobilis). A peer-reviewed study (Malaspina et al., 2022, Toxins) documents that in the Mediterranean region cherry laurel is sometimes collected instead of bay laurel - dangerous because cherry laurel leaves contain cyanogenic glycosides (prunasin, prulaurasin, amygdalin). When the leaves are crushed, chewed or cooked they release hydrogen cyanide, which blocks the body's use of oxygen; poisoning can cause headache, breathlessness, vomiting and convulsions, and severe cases (especially in children) can be fatal. Because a single bay-like leaf added to a dish is a realistic swap, this is a genuine kitchen hazard.
Distinguishing Features: SMELL (decisive): crush the leaf. True bay smells warm, spicy and camphoraceous (the familiar bay-leaf aroma). Cherry laurel smells of bitter almonds or marzipan - that almond smell is released cyanide and is a danger sign, not a seasoning., Leaf margin: bay leaves have smooth, slightly wavy (undulate) edges with no teeth. Cherry laurel leaves have finely serrated (toothed) edges., Petiole and glands: the bay leaf-stalk is reddish and the underside is plain. Cherry laurel has a green leaf-stalk and 2-4 small nectary glands visible on the underside near the leaf base., Shape and texture: bay is oblong and tapers to a point, up to about 10 cm; cherry laurel leaves are larger, broader (widest near the tip) and very thick and leathery.
Key Test: Crush a leaf and smell it, then check the edge. A warm camphoraceous bay aroma with a smooth wavy (untoothed) margin and a reddish stalk = true bay - safe. A bitter-almond/marzipan smell with a finely toothed (serrated) margin and small green glands under the leaf base = cherry laurel - do NOT cook with it; the almond smell is cyanide.
