Botanical Description
Biennial (occasionally annual) herb with finely divided, feathery, carrot-like leaves similar to those of other Apiaceae. In its second year it sends up a branched, grooved, hollow flowering stem topped with flat compound umbels of small white or pinkish flowers, followed by the characteristic curved, ridged, strongly aromatic seeds (the familiar rye-bread spice).[4]
Tall, robust perennial herb with a thick, fleshy taproot and large, broadly oval, strongly veined opposite leaves (a distinguishing feature from the deadly Veratrum album, which has alternate leaves). Bright golden-yellow, star-shaped flowers are borne in dense whorls in the leaf axils along the upper stem.[11]
Habitat
Grows in meadows, grassy roadsides and waste ground on well-drained soils; native to Europe and Western Asia and widely cultivated as a spice crop.
Grows in subalpine and alpine meadows and pastures of central and southern Europe, typically at moderate to high elevations on calcareous soils.[11]
Harvesting
The seed is harvested in mid- to late summer of the second year, once the umbels have browned and dried, then threshed and dried further; leaves can be picked through the first year and the root dug in autumn of year one or spring of year two.
The root is dug in autumn from plants at least several years old, when bitter secoiridoid content is highest, then cleaned and dried; careful identification against the deadly Veratrum album (white hellebore), which shares similar habitat and, before flowering, a superficially similar rosette, is essential before wild-harvesting.[11]

Caraway seed is one of the classic Apiaceae carminative digestive spices, used traditionally for indigestion, bloating, flatulence and poor appetite, and, per the EU herbal monograph, for symptomatic relief of mild digestive complaints and bloating.[4]
Gentian root is one of the classic bitter digestive herbs of European tradition, used to stimulate appetite and digestive secretions for temporary loss of appetite and mild dyspeptic complaints, and has long been a base ingredient of bitter tonics, aperitifs and digestifs.[11]
